Beet Spread

Ingredients
  

  • 1/3 cup walnuts
  • 1 garlic clove
  • 8 ounces beets about 2 medium beets
  • Juice of one lemon about 4 tablespoons
  • 2 Tbsp. oil olive is best
  • ¼ tsp. salt or to taste

Instructions
 

  • Peel the garlic clove. Chop garlic and walnuts together in a food processor.
  • Peel the beets and cut into small dice.
  • Add beets and lemon juice to the food processor and pulse together with the garlic and walnuts until beets are finely chopped.
  • Add oil and salt and process to a chunky paste.
  • Add a little more oil for a thinner consistency, if desired.

Notes

Delicious on crackers or as a sandwich spread.
2 Tbsp. tahini can be used in place of the walnuts.
Carrots can be used in place of the beets.
