Ingredients

beets
about 2 medium beets
Juice of one lemon
about 4 tablespoons

Instructions
Peel the garlic clove. Chop garlic and walnuts together in a food processor.
Peel the beets and cut into small dice.
Add beets and lemon juice to the food processor and pulse together with the garlic and walnuts until beets are finely chopped.
Add oil and salt and process to a chunky paste.
Add a little more oil for a thinner consistency, if desired.
Notes
Delicious on crackers or as a sandwich spread.
2 Tbsp. tahini can be used in place of the walnuts.
Carrots can be used in place of the beets.
