Celeriac and Apple Salad

Ingredients
  

  • 1 medium celeriac root cleaned and peeled (see notes)
  • 1 apple
  • 2 Tbsp. olive oil
  • 2 Tbsp. apple cider vinegar or lemon juice
  • 2 tsp. mustard
  • Salt and pepper to taste

Instructions
 

  • In a large bowl whisk together the oil, vinegar or lemon juice, mustard, salt, and pepper.
  • Prep the celeriac.
  • Use a box grater to grate the celeriac and the apple. Toss immediately with the dressing to avoid browning.

Notes

To prepare the celeriac, cut off the top and the bottom with the roots. Use a vegetable peeler to take the rest of the peel off.
