Beet Spread
Ingredients
- 1/3 cup walnuts
- 1 garlic clove
- 8 ounces beets about 2 medium beets
- Juice of one lemon about 4 tablespoons
- 2 Tbsp. oil olive is best
- ¼ tsp. salt or to taste
Instructions
- Peel the garlic clove. Chop garlic and walnuts together in a food processor.
- Peel the beets and cut into small dice.
- Add beets and lemon juice to the food processor and pulse together with the garlic and walnuts until beets are finely chopped.
- Add oil and salt and process to a chunky paste.
- Add a little more oil for a thinner consistency, if desired.
Notes
Delicious on crackers or as a sandwich spread.
2 Tbsp. tahini can be used in place of the walnuts.
Carrots can be used in place of the beets.
