Roasted Cabbage and Onions

Ingredients
  

  • 1 medium head green cabbage or ½ large head, chopped
  • 2 large onions chopped
  • 3 Tbsp. vinegar or lemon juice
  • 2 Tbsp. olive oil or other salad oil
  • 2 Tbsp. prepared mustard
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 425° and grease a rimmed baking sheet.
  • Combine the cabbage and onions on the baking sheet and roast until tender, about 30 minutes. Stir once after the first 15 minutes.
  • While the cabbage and onions are roasting, prepare the dressing. Combine the vinegar/lemon juice, oil, mustard, and salt and pepper in a small bowl. Whisk with a fork until blended.
  • Toss the cabbage and onions with the dressing. You can do this on the baking sheet or in a large bowl.

Notes

For the vinegar, you can use balsamic, red wine, or apple cider vinegar.
