Colorful Coleslaw (no mayo)
Ingredients
- 4 cups red cabbage thinly sliced
- 4 cups white cabbage thinly sliced
- 2 big carrots grated
- ½ onion white or red, thinly sliced
- ½ cup pumpkin seeds or sunflower seeds optional
- ¼ cup olive or canola oil
- 2 - 3 Tbsp. lemon juice or apple cider vinegar
- 1 clove garlic minced (or ¼ tsp. garlic powder)
- Salt and pepper to taste
Instructions
- Thinly slice the red and white cabbage(see note). Grate the carrots on a box grater and thinly slice the onion.
- In a large bowl, whisk together the olive oil, lemon juice or apple cider vinegar, garlic, salt, and pepper.
- Add the vegetables and the seeds to the dressing and toss to combine.
Notes
To prepare the cabbage first clean the head and cut it in half. Then cut each half through the core again. Remove the core from each quarter. Either use a knife or a mandolin to cut the cabbage into thin slices.
