

Banana Bread
Ingredients
- 2 large overripe bananas
- 1/3 cup vegetable oil Canola oil
- ½ cup honey or maple syrup
- 2 eggs
- ¼ cup milk any milk you have or even water
- 1 tsp vanilla extract
- 1 tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- 1 ¾ cup whole wheat flour
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat oven to 375°. Grease a 9 x 5 loaf pan.
- Place the bananas into a big bowl and mash them up with a fork or a potato masher.
- Add the oil and honey and whisk together.
- Add the eggs, milk, and vanilla extract and mix well.
- Add the dry ingredients (baking soda, salt, cinnamon and flour) and mix until just combined (this works best with a big spoon or spatula).
- Fold in nuts or chocolate chips if you are using them.
- Bake for 50 – 60 minutes or until a toothpick inserted into the center comes out clean.
