Rhubarb and Strawberry Compote

If you are lucky to have both rhubarb and strawberries in the house, make this compote and enjoy it as a snack, dessert, or for breakfast. It goes well with yogurt, on cottage cheese, or with vanilla ice cream.
You can also make it just with rhubarb or sub in other fruits.

Servings 4 people

Ingredients
  

  • 1 lbs rhubarb
  • 1 lbs strawberries
  • 1-2 Tbsp. sugar, honey or your favorite sweetener
  • 1 Tbsp. water

Instructions
 

  • To prepare the rhubarb, trim off the base of the stalk and any leaves. Rinse the rhubarb stalks in water and slice into pieces about one inch long.
  • Wash the strawberries and remove the green caps. Slice them in half or quarters.

Your can cook the compote on the stovetop or in the microwave:

  • Stovetop: Place the rhubarb, strawberries, sweetener, and water in a saucepan. Simmer over low heat, stirring often, until tender, about 10 -15 minutes.
  • Microwave: Place the ingredients in a microwave-safe dish. Cover loosely. Microwave on high until tender, about 5 minutes or so.
