Cut off both ends of the squash and then cut lengthwise. Use a spoon to scoop the seeds out of each half of the squash. Slice each half of the squash into ⅛ - ¼ inch thick smileys.
Toss the squash with salt, oil and pepper on a baking sheet and roast for 30 minutes.
Notes
- For a variation of this recipe add maple syrup, hot sauce or soy sauce to the squash halfway through baking.
- For easy clean-up put parchment paper or tin foil on the baking sheet.
