2large onionschopped
3Tbsp.vinegar or lemon juice
2Tbsp.olive oilor other salad oil
2Tbsp.prepared mustard
Salt and pepper to taste
Instructions
Preheat oven to 425° and grease a rimmed baking sheet.
Combine the cabbage and onions on the baking sheet and roast until tender, about 30 minutes. Stir once after the first 15 minutes.
While the cabbage and onions are roasting, prepare the dressing. Combine the vinegar/lemon juice, oil, mustard, and salt and pepper in a small bowl. Whisk with a fork until blended.
Toss the cabbage and onions with the dressing. You can do this on the baking sheet or in a large bowl.
Notes
For the vinegar, you can use balsamic, red wine, or apple cider vinegar.
