Banana Bread

Ingredients

  • 2 large overripe bananas
  • 1/3 cup vegetable oil Canola oil
  • ½ cup honey or maple syrup
  • 2 eggs
  • ¼ cup milk any milk you have or even water
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 ¾ cup whole wheat flour
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  • Preheat oven to 375°. Grease a 9 x 5 loaf pan.
  • Place the bananas into a big bowl and mash them up with a fork or a potato masher.
  • Add the oil and honey and whisk together.
  • Add the eggs, milk, and vanilla extract and mix well.
  • Add the dry ingredients (baking soda, salt, cinnamon and flour) and mix until just combined (this works best with a big spoon or spatula).
  • Fold in nuts or chocolate chips if you are using them.
  • Bake for 50 – 60 minutes or until a toothpick inserted into the center comes out clean.
